This state-of-the-art facility, crafted for the renowned Japanese sake brand Dassai, is an exceptional blend of tradition and innovation. Attendees will gain insights into the art of sake-making, exploring everything from the Koji room to the fermentation tanks, as well as the architectural and landscape design elements that make the brewery unique.

The tour includes a detailed look at the brewery’s architectural design, which beautifully integrates traditional Japanese motifs and construction methods, alongside landscape design that merges classic Japanese aesthetics with the natural beauty of the Hudson Valley. The experience concludes with a tasting of Dassai Blue's premium Junmai Daiginjo sake, paired with a curated food selection. David Coon’s recent work includes the Asahi Shuzo Brewery in New York — the first US-based brewery for Japan’s oldest sake producer. In his decades at Pelli Clarke & Partners, he has contributed to numerous international projects, including the Petronas Towers, and several mixed-use developments in Tokyo: the Toranomon-Azabudai district, the Ark Hills Sengokuyama Tower, and the Muromachi Chibagin Mitsui Building. He is an Associate Fellow at Branford College at Yale University, and an advisor to first-year Yale Undergraduates. David holds a Bachelor of Architecture from Pennsylvania State University.
